耶氏酵母屬學名Yarrowia)是子囊菌門酵母菌目雙足囊菌科的一個。過去本屬為單型屬,僅包含解脂耶氏酵母Yarrowia lipolytica,又稱解脂亞羅酵母)一種,為可使用許多烴類為碳源的酵母菌雙態性真菌[2],並可合成一些特殊油脂,其細胞中油脂含量超過20%[3],因此是工業微生物學英语Industrial microbiology上的重要物種[4]。2019年,歐洲食品安全局核准解脂耶氏酵母為一種安全的新興食物英语Novel food[5]

分子種系發生學研究結果已將許多原屬其他類群的酵母菌歸入本屬中[6][7][8]
